Recipe: Caramelized Salmon Fruit Salad

Ingredients

  • 5 slices of smoked salmon,
  • 1/2 mango,
  • blueberries,
  • 10 gr. brown sugar,
  • pomegranate,
  • dragon fruit,
  • 1/2 lime.

Instructions

  1. This is one of my original ideas for a stunning gourmet appetizer, suitable for any kind of party or event. The fruits and the sweetness of the caramelized smoked salmon, drizzled with lime juice, compliment each other extremely well, and the taste is really amazing.
  2. Roll 4 or 5 slices of smoked salmon for each person in the way you see in the picture, arrange in a baking pan over parchment paper, sprinkle with sugar and broil in a preheated oven until caramelized.
  3. Serve over spring salad and sprinkle with berries and other fruits of your choice. You can use sesame ginger dressing for the fruits. I served the caramelized salmon rolls for this photo over a slice of dragon fruit, with a delicate mango cage, blueberries, pomegranate, dragon fruit scoops and lime, however you can choose your own combination of fruits.

 

Ingredients for the sesame ginger dressing: 1 large ginger root,

3 tablespoon sesame oil (dark),

1/3 cup white vinegar,

2/3 cup corn syrup.

Salad: Your favorite salad mix, preferably made of iceberg lettuce, endive, radiccio, red leaf lettuce, little bit of spring mix and so on.

Fresh Fruits: strawberries, orange sections, sliced pear and apple, blueberries and any other fruit you might want to use. You will, also, need toasted sesame seeds to sprinkle on top of the salad.

Recipe: Grate finely the ginger root and squeeze it. Put the ginger juice in a small pan. Add the sesame oil, white vinegar and corn syrup to the same pan and bring to a boil. Boil for about 5 minutes and remove the dressing from heat. Let it cool down and then transfer it into a squeeze bottle. Let the dressing get cold in the fridge before using it. Toss the salad mix and the fruits with the sesame – ginger dressing and sprinkle some toasted sesame seeds on top of the salad. Add sliced grilled chicken breast if desired.
