A quick little breakfast treat, and a good way to use up overly ripe bananas.

Recipe: Banana Crumb Muffins

Ingredients

  • 1½ cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 3 bananas, mashed
  • ¾ cup white sugar
  • 1 egg, lightly beaten
  • ⅓ cup butter, melted
  • ⅓ cup packed brown sugar
  • 2 tbsp flour
  • ⅛ tsp ground cinnamon
  • 1 tbsp butter

Instructions

  1. Preheat oven to 375 degrees F. Line a muffin pan with 12 muffin papers.
  2. In a large bowl, combine flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture until the entire mixture is moistened. Spoon batter into the muffin papers.
  3. In a small bowl, combine brown sugar, 2 tablespoons flour and cinnamon. Mix in 1 tablespoon butter until mixture tightens up and becomes crumbly. Sprinkle crumbles over muffin batter and gently press into batter.
  4. Bake in preheated oven for 18 to 20 minutes. To test if muffins are done, insert a toothpick into the center of a muffin. If they are done it will come out clean.
