Recipe: Mozzarella Baked Tomatoes
- 2 medium tomatoes
- 1/3 cup (50g) freshly grated Mozzarella
- fresh oregano
- freshly ground pepper
- olive oil
- Preheat oven to 450 F
- Cut the tomatoes into approximately 1/4-inch thick slices. Place them on a baking sheet. Top with Parmesan, oregano, salt and pepper (all to taste). Drizzle with a small bit of olive oil and bake until tomatoes are tender and the cheese is melted, around 10-15 minutes.
