Recipe: St. Louis Ribs with Maple BBQ Sauce

Summary: Trying to re-create this life-changing plate of meat and bones at home, I stumbled across a pretty tasty sounding maple syrup BBQ sauce, and from her description of the ribs I guessed them to be the meaty St. Louis variety.

Ingredients

  • 2 Racks St. Louis Style Pork Ribs (Spare Ribs)
  • for the sauce:
  • 1 1/2 tablespoon canola oil
  • 1/2 white onion, diced
  • 1/2 tablespoons finely minced fresh ginger
  • 2 garlic cloves, finely minced
  • 1/4 teaspoon cayenne
  • 1/8 teaspoon black pepper
  • 1/2 cup cider vinegar
  • 1/4 cup water
  • 3 ounces tomato paste
  • 1/4 cup soy sauce
  • 2 tablespoon sesame oil
  • 1 cup pure maple syrup
  • 1 1/2 tablespoon dry mustard
  • 1/8 teaspoon dried thyme
  • 1/2 tablespoon kosher salt
  • for the dry rub:
  • 1/4 cup sweet paprika (use 1/2 pimenton if you have some for a smokier flavor)
  • 1/2 cup brown sugar
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 2 teaspoons cumin
  • 2 teaspoons salt
  • 2 teaspoons cayenne
  • 1 teaspoon dry mustard
