Summary: These muffins have the flavor of a cakey type dougnut, and are filled with raspberry jam and covered in superfine granulated sugar. Ingredients

    • 1/4 cup butter
    • 1/4 cup vegetable oil
    • 1/2 cup granulated sugar
    • 1/3 cup packed brown sugar
    • 2 large eggs
    • 1 1/2 tsp baking powder
    • 1/4 tsp baking soda
    • 1/4 tsp ground nutmeg
    • 3/4 tsp salt
    • 1 1/2 tsp vanilla
    • 2 2/3 cups flour
    • 1 cup milk
    • Topping:
    • 4 TBS butter, melted
    • 1/3 cup granulated sugar, pulsed in blender until it’s fine but not powdered
    • 12 oz jar jelly, jam, or preserves
