Summary: These enchirritos are a favorite of mine. They are part enchilada, part burrito…hence the name. The flavors are even better the next day as leftovers.

 

Recipe: Enchirritos

Ingredients

    • 1/4 c. butter
    • 1/4 c. flour
    • 4 c. water
    • 3 Tbsp. chili powder
    • 1 tsp. garlic salt
    • 1 lb. ground beef
    • 1 lb. ground sausage (I used a bacon flavored kind once and it was fabulous)
    • 1/4 c. chopped onion
    • 1 c. refried beans
    • 8 flour tortillas (8 inch), warmed
    • 3 c. shredded cheese (monteray jack or cheddar works great)
    • Optional toppings: shredded lettuce, chopped tomatoes, sliced olives, sour cream
