Ingredients

    • 1 link of Cajun sausage (about 1/2 pound), sliced (or your favorite or a ham bone with some meat on, you can also use bacon)
    • 1 large onion, chopped
    • 2 carrots, diced
    • 2 stalks of celery, diced
    • 2 cans black-eyed peas, drained and rinsed (or 1-16 oz bag dry black-eyed peas)
    • 1 can diced tomatoes and green chiles (mild or hot)
    • 2 cups fat-free low sodium chicken broth
    • Cajun seasoning, such as Tony Chachere’s or Zatarains, to taste
