French Toast with Coconut Syrup

    • 2 eggs, lightly beaten
    • ½ teaspoon vanilla
    • 1 teaspoon cinnamon
    • ½ cup milk
    • 2 tablespoons flour
    • 1 cup sweetened shredded coconut
    • for the blueberry filling
    • 1 cup frozen or fresh blueberries
    • 1 cup water+1 teaspoon corn starch
    • 1 cup sugar
    • 4 ounces cream cheese, softened
    • for the coconut syrup
    • 1 can coconut milk +1 tablespoon corn starch
    • 1 cup light corn syrup
    • 1 teaspoon coconut extract
    • ½ cup sugar
