Wow, that’s a lot of sugar. Is it a misprint/typo? OR is this a super sweet potato salad. I’d be afraid to try it as written.
The dressing reminds me of the one I make for a broccoli salad, only with much less sugar..
No typo, it is supposed to be sweeter than most potato salads. If you cut the sugar down, it becomes more of a German style, which is good as well.

Mayo would be fine. The flavor will be a bit different with the missing seasonings, but I’m sure it will still be delicious.
