Ingredients

    • 2 tbsp olive oil, divided
    • 4 boneless and skinless chicken breasts
    • 1 cup diced red onion
    • 1 cup diced red bell pepper
    • sea salt
    • ground black pepper
    • 1/2 cup white cooking wine
    • 2 tbsp lemon juice
    • 12 pitted green olives
    • 1-8.5 oz can quartered artichoke hearts, drained
    • 1 lemon, cut into 8 wedges
    • 1/4 cup shredded six-cheese Italian blend (or parmesan)
    • 2 tbsp minced parsley (I used Italian)
