Recipe: Baileys Irish Cream Cookies
Summary: In one word these cookies are boozylicious, and I don’t know about you, but I like the sound of that! What I love most about these cookies is that there’s not just Baileys in the filling, but in the cookie dough too. The Baileys in the sugar cookies not only adds a delicate layer of flavor, but also cuts down on the sweetness nicely.
Ingredients
- Baileys Cookie Dough
- 8 ounces unsalted butter, room temp
- 1&1/2 cups sugar
- 1 egg
- 1 egg yolk
- 1 teaspoon vanilla extract
- 4 cups AP flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup Baileys
- Baileys Irish Cream Filling
- 8 ounces unsalted butter, room temp
- 2 & 1/2 cups powdered sugar
- 6 T. Baileys
- 2 t. Trablit – you can also use instant espresso powder
- Garnish
- dark chocolate for dipping
- festive sprinkles for decorating
