Baked Sausage Rigatoni with Spinach
This casserole is soul satisfying in the way only a massive pan of cheesy pasta can be.
Ingredients
- 1 pound rigatoni noodles
- a few handfuls of baby spinach (about 3 cups)
- 1/4 cup olive oil
- 1 medium yellow onion, diced
- 6 cloves garlic, minced
- 5 Italian sausage links, casings removed (one package, I used turkey sausage)
- 2 cans whole tomatoes (28 oz. each)
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 1 teaspoon kosher salt
- a few grinds of pepper
- For the cheese mix
- 15 ounces ricotta cheese
- 1 large egg
- 1/2 cup grated parmesan
- 2 teaspoons dried basil
- 2 cups shredded Italian cheese blend
