This casserole is soul satisfying in the way only a massive pan of cheesy pasta can be.

Ingredients

  • 1 pound rigatoni noodles
  • a few handfuls of baby spinach (about 3 cups)
  • 1/4 cup olive oil
  • 1 medium yellow onion, diced
  • 6 cloves garlic, minced
  • 5 Italian sausage links, casings removed (one package, I used turkey sausage)
  • 2 cans whole tomatoes (28 oz. each)
  • 1 tablespoon dried basil
  • 1 tablespoon dried oregano
  • 1 teaspoon kosher salt
  • a few grinds of pepper
  • For the cheese mix
  • 15 ounces ricotta cheese
  • 1 large egg
  • 1/2 cup grated parmesan
  • 2 teaspoons dried basil
  • 2 cups shredded Italian cheese blend
