Recipe: Carrot Coconut Cake
Summary: Totally to die for! There is a hidden ingredient that is in this cake that maybe should be in the title, but for some reason was left out. That ingredient would be pineapple.

- 1/4 teaspoon Nutmeg
- 3/4 cup (1-1/2 sticks) Unsalted Butter, softened
- 1-1/2 cups Sugar
- 3 whole Eggs
- 1/2 cup Whole Milk
- 2 cups grated Carrots
- 1 cup flaked Coconut
- 1 cup (8 oz.) fresh Pineapple, crushed
- 1 recipe for Cream Cheese Frosting
- Optional: 1/2 cup chopped Walnuts
