Summary: Totally to die for! There is a hidden ingredient that is in this cake that maybe should be in the title, but for some reason was left out. That ingredient would be pineapple.


    • 2 cups Unbleached All Purpose Flour
    • 2-1/2 teaspoons of Baking Powder
    • 2 tsp. ground Cinnamon
    • 1/4 teaspoon Nutmeg
    • 3/4 cup (1-1/2 sticks) Unsalted Butter, softened
    • 1-1/2 cups Sugar
    • 3 whole Eggs
    • 1/2 cup Whole Milk
    • 2 cups grated Carrots
    • 1 cup flaked Coconut
    • 1 cup (8 oz.) fresh Pineapple, crushed
    • 1 recipe for Cream Cheese Frosting
    • Optional: 1/2 cup chopped Walnuts
