Recipe: Chilean-style Empanadas

Ingredients

  • For the filling:
  • 1 lb of ground beef (I used ground sirloin)
  • 1/2 tbsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp ground achiote
  • 1 cup of diced yellow onions
  • 1/2 cup of diced green peppers
  • 2 cloves of garlic minced
  • Olive oil to sautee
  • 1/2 cup golden raisins
  • 1/2 cup sliced Spanish olives
  • 2 tbsp chopped cilantro
  • 3 hard-boiled eggs, cut in quarters
  • For the dough:
  • 3 cups unbleached all-purpose flour
  • 1 tsp salt
  • 1 stick unsalted butter at room temperature cut in cubes
  • 2 egg yolks
  • 2 tbsp white vinegar
  • 5-10 tbsp cold water
  • For egg wash:
  • 1 egg + a splash of milk or light cream, beaten
