Classed Up Egg Salad


Recipe: Classed Up Egg Salad

Summary: Looking for something to do with all those leftover hard boiled eggs after Easter.. Hold on to this recipe, I think this would be good for Tuna Salad as well!!


  • 1 dozen Eggs, boiled, peeled and chopped
  • 2/3 cup of Mayonnaise
  • 4 teaspoons Whole Grain Mustard
  • 2 Radishes, chopped small
  • 2/3 cup of Mayonnaise
  • 1 Tbsp Capers
  • 1 1/2 Tbsp Lemon Juice
  • 1 Tbsp Scallions, sliced thin (whites and light green)
  • 1 Tbsp fresh Tarragon, or fresh Basil chopped
  • Fresh Pepper to taste
  • Sliced Bread, Bagels or Crackers for serving


  1. In a bowl, toss all ingredients together. Spread on bread and serve.
