These enchirritos are a favorite of mine. They are part enchilada, part burrito…hence the name. The flavors are even better the next day as leftovers.
Recipe: Enchirritos
Ingredients
- 1/4 c. butter
- 1/4 c. flour
- 4 c. water
- 3 Tbsp. chili powder
- 1 tsp. garlic salt
- 1 lb. ground beef
- 1 lb. ground sausage (I used a bacon flavored kind once and it was fabulous)
- 1/4 c. chopped onion
- 1 c. refried beans
- 8 flour tortillas (8 inch), warmed
- 3 c. shredded cheese (monteray jack or cheddar works great)
- Optional toppings: shredded lettuce, chopped tomatoes, sliced olives, sour cream
