Filipino Chicken Adobo is the national dish of the Philippines. It has evolved over the centuries as a way of preparing foods that won’t spoil easily in a tropical climate. The vinegar gives it the tangy taste and acts as the preservative. Each region has its own version, but the most commonly used is pork and/or chicken. The steps below is the traditional way of making chicken adobo.

Filipino Chicken Adobo

Yield: About 4 servings

With only a few ingredients that you already have, you can make this Filipino Chicken Adobo. The perfect blend of tender chicken, a savory and sweet glaze, with just a hint of heat.

Ingredients

  • 6-8 chicken pieces, preferably legs and wings
  • 1/3 cup balsamic vinegar
  • 1/4 cup soy sauce
  • 4 cloves of garlic, crushed
  • 1-2 pieces bay leaf
  • 1/2 tsp freshly cracked (not ground) black peppercorns

Instructions

  1. Place chicken, garlic, peppercorn, soy sauce, and vinegar in a pan and bring to a boil
  2. When chicken is cooked, remove chicken to a colander and drain. Set aside the pot with soy sauce and vinegar.
  3. When chicken has finished draining, fry pieces in hot oil at medium heat (have a cover ready for splatters). Fry until all chicken is golden brown.
  4. Put chicken pieces back in the pot with soy sauce and vinegar and bring to simmer. Add 1-2 pieces of bay leaf.
  5. Cook until the sauce has largely reduced to desired thickness. Many people allow the sauce to cook until the sauce has thickened and adhered to the chicken, which begins to make a popping noise due to the high, direct heat.
