Irish Lamb Stew

Irish Lamb Stew - I LOVED this stew and will make it again and again this fall and winter. The best part: the lamb is braised in Guinness beer on the stove top for about two hours. I used a pound of organic, free range Icelandic lamb from Whole Foods.

Ingredients

  • 1 Tbs. olive oil
  • 1 lb. lamb, cut into bite sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 Tbs. flour
  • 1 Guinness (or other dark stout)
  • Beef stock
  • 1 Tbs. rosemary, chopped
  • 1 Tbs. thyme, chopped
  • 1 bay leaf
  • salt and pepper to taste
  • 2 Yukon Gold potatoes, cut into bite sized pieces
  • 4 carrots, peeled and cut into bite sized pieces
  • 1 handful parsley, chopped for garnish (optional)
