Recipe: Korean Dumplings – Mandu

Summary: Mandu is a Korean dumpling stuffed with a mixture of various meat and vegetables.

Ingredients

  • Filling
  • 1/2 lb ground pork (or other meat if preferred)*
  • 1/4 lb ground shrimp or ground beef*
  • 1 medium zucchini, finely chopped
  • 1/2 head of a small cabbage (about 1 lb), finely chopped
  • 8 oz fresh mushrooms, finely chopped (Shiitaki preferably )
  • 1 small onion, finely chopped
  • 3 scallions, finely chopped
  • 1 tablespoon minced garlic
  • 1 teaspoon finely minced ginger (or juiced)
  • 1 tablespoon sesame oil
  • 1 egg
  • 1 tablespoon all-purpose flour
  • 1/2 to 1 teaspoon salt to season the filling and more for salting vegetables
  • 1/2 teaspoon pepper
