    • Cake:
    • 1-1/2 cups all-purpose flour
    • 1 cup whole wheat flour
    • 1/2 cup sugar (brown sugar can be used too)
    • 2-1/2 teaspoons dry active yeast
    • 1/2 cup skim milk (warmed to 110-120 degrees F)
    • 1/4 teaspoon sea salt
    • 3 tablespoons unsweetened applesauce
    • 1 tablespoon canola oil
    • 3 large eggs at room temperature
    • 1 teaspoon vanilla extract
    • Filling:
    • 8 ounces light cream cheese
    • 4 tablespoons sugar
    • 1 teaspoon vanilla
    • 4 tablespoons flaked coconut
    • Icing:
    • 1/2 cup powdered sugar
    • 2 tablespoons water
    • Green, purple and yellow sprinkles
