Mahi-Mahi Shish Kabobs

An island classic done with Cajun Flavor!

Ingredients

  • Mahi-Mahi Fillets
  • Sweet Bell Peppers – Green and Yellow
  • Red Onions
  • Cherry Tomatoes
  • 1/2 Cup Olive Oil
  • 1 tsp. Cajun Seasoning
  • 1 tsp. Blackening Seasoning*
  • 1 tsp. Basil Leaves
  • 1 tsp. Old Bay
  • Wooden Skewers (Soak 30 minutes in water before grilling)

Instructions

  1. Cut mahi-mahi into fifteen squares.
  2. Mix all ingredients in a shallow pan, and place in shish kabob sticks.
  3. Start your grill on smoke with lid open for 5 minutes to get started.
  4. Place kabobs in grill and either smoke for 45 minutes OR cook on high for 8 minutes. Remove from grill and enjoy!

Blackening Seasoning*

  • 1 heaping tablespoon paprika
  • 2 teaspoons salt
  • 1 heaping teaspoon garlic powder
  • 1 heaping teaspoon onion powder
  • 1/4 to 1/2 teaspoon ground cayenne pepper
  • 2 teaspoons black pepper
  • 1/2 teaspoon leaf thyme
  • 1/2 teaspoon leaf oregano
