Once I set my eyes on it, I knew I had to make this chicken tortilla soup.  I love flavor, I added a lot more veggies to the mix!

Once I set my eyes on it, I knew I had to make this chicken tortilla soup.  I love flavor, I added a lot more veggies to the mix!

Ingredients

  • 2 tablespoons vegetable oil
  • 1 small onion, diced
  • 2 tablespoons garlic, minced or pressed
  • 2 jalapenos, finely diced
  • 1 can (10.5 ounces) condensed chicken with rice soup, undiluted
  • 1 12 cups water
  • 1 cup chunky salsa
  • 1 cup canned kidney beans or pinto beans, rinsed and drained
  • 1 cup canned black beans, rinsed and drained
  • 1 cup frozen sweet corn, thawed
  • 2 cups chicken, cooked and cubed
  • 1 teaspoon ground cumin
  • Salt and pepper, to taste
  • Fresh cilantro, chopped (optional)
  • Tortilla chips
  • Shredded cheddar or Monterrey cheese (optional)
  • Sour cream (optional)
