Overnight Bacon and White Cheddar Scones
It was by far the best scone I’ve ever had. So flaky and moist, the bacon flavor was just amazing. Super intense.
Ingredients
- 12 oz. applewood smoked bacon, cooked, drained and cut into ¼ inch pieces, drippings reserved
- ¾ cup + 1 teaspoon all purpose flour, spooned and leveled
- 1 ½ cups + ½ teaspoon cake flour, spooned and leveled, and sifted if it is clumpy (you can make your own )
- 1 ½ teaspoons + 1/8 teaspoon baking powder
- 1/4 teaspoon + 1/8 teaspoon baking soda
- 2 tablespoons + ¾ teaspoon sugar
- 1 and 1/8 teaspoon salt
- 4.7 ounces (1 stick plus 1 ½ tablespoons) cold unsalted butter, cut into ¼ inch cubes
- ¼ cup plus 1 tablespoon heavy cream
- ¼ cup plus 2 ½ tablespoons full-fat plain Greek yogurt
- 2 cups white cheddar cheese, grated
- ¼ cup chives, minced
- To top scones:
- 3 tablespoons bacon drippings
- freshly ground pepper
- 1 ½ teaspoons sugar
- ½ cup white cheddar cheese, grated
