Party Antipasto Platter

Antipasto is generally the first course of a traditional Italian meal. Serve up an Antipasto platter, and surprise your guests.

Ingredients

  • 8 ounces Genoa salami, roll pieces
  • 8 ounces sopressata or other hard salami, roll pieces
  • 8 ounces sharp provolone cheese, cut into bite-size pieces
  • 8 ounces fresh mozzarella cheese, cut into bite-size pieces
  • 8 ounces red olives or black olives
  • 1 (14 ounce) can artichokes, drained and sliced
  • 1/2 (12 ounce) jar roasted red peppers, drained and sliced
  • 1 cup pitted Kalamata olives
  • 1 cup pitted green olives
  • 1 tablespoon extra-virgin olive oil
  • 3 tablespoons red wine vinegar
  • freshly-ground black pepper, to taste
  • 1 tablespoon oregano
  • 1/4 cup shredded fresh basil leaves
  • breadsticks, crostini, plain biscotti or crackers for serving

Instructions

  1. Antipasto is generally the first course of a traditional Italian meal, and consists of a heaped platter of meats, vegetables, and cheeses, to be shared among the diners and consumed before the start of the meal. In order to kick an Italian meal off in style, serve up an Antipasto platter, and surprise your guests. Just make sure all your meats and cheeses are cut in a similar fashion, to make the layering look more decorative or symmetrical pattern
  2. Line a large platter with lettuce leaves. Arrange ingredients, on a platter in a decorative pattern.
  3. Mix olive oil, red wine vinegar, oregano and basil together and lightly drizzle over olives, peppers and artichokes.
  4. Serve with breadsticks, crostini, plain biscotti or crackers
