Summary: The Meyer lemon gives these cupcakes THE perfect balance of sweet and tart and reminds me of those seemingly far away days of summer.

Ingredients

    • For cupcakes:
    • 6 oz. butter, melted
    • 1 c. + 2 tbs. cake flour
    • ½ c. + 2 tbs. sugar
    • 1 ½ tsp. baking powder
    • ½ tsp. salt
    • Zest of 2 Meyer lemons (about 1 rounded teaspoon)
    • ¼ c. sour cream
    • 1 tbs. Meyer lemon juice
    • 2 large eggs
    • Lemon Buttercream Frosting:
    • 4 tbs. unsalted butter
    • 2 c. confectioners’ sugar
    • 1 ½ tsp. Meyer lemon juice
    • 1-2 tbs. milk
    • A few drops of red food coloring
    • Light Pink Sugar Pearls
    • Pink and Yellow bendable straws (12 total), trimmed slightly
