Recipe: Potatoes with Fried Eggs and a Roasted Pepper Aiola- Huevos Estrellados
Summary: A rich golden brown and crispy potatoes with bacon to accompany fried eggs. A breakfast of champions. It leaves you quite satisfied all morning!
Ingredients
- 2 potatoes, diced
- 4 tortillas
- 1 tablespoon butter
- 1 tablespoon vegetable oil
- ½ teaspoon oregano
- 1 tablespoon fresh cilantro
- 1/4 cup enchilada sauce
- Salt and pepper to taste
- pinch of red pepper flakes
- 4 eggs
- Piquillo aioli
- 1 c chopped drained piquillo peppers (fire roasted peppers from a jar)
- 2 tbsp Sherry wine vinegar
- 4 tbsp chopped fresh thyme
- 2 garlic cloves minced
- 1 c mayo
- 1/4 tsp salt
- 1/4 tsp cayenne
- freshly grated black pepper to taste
Instructions
- Piquillo aioli
Drain the piquillos, chop the thyme, mince the garlic. Combine the first five ingredients in a food processor and blend. Add the cayenne, salt, and pepper. Refrigerate.
- Clean the potatoes and dice large.
- Add the butter, oil and potatoes.
- Mix well and season with salt, pepper and oregano and they will cook for about 10 minutes over medium heat.
- Stir every 2 minutes until the potatoes are not going to burn.
- garnish with cilantro
- Serve potatoes with egg and served warm tortilla with piquillo aioli. Also could be served with Jamón serrano or diced ham.
