Recipe: Heirloom Carrots with Oranges Ginger and Walnuts

Ingredients

  • 1 bunch carrots
  • 3 Tb butter
  • 1-2 Tb brown sugar
  • 2 Tb grated fresh ginger
  • ¼ cup honey
  • Juice and finely grated rind of 1 orange
  • 10-15 walnut halves
  • 2 satsuma mandarins, sectioned (or small can mandarin oranges)
  • Sea-salt flakes and freshly ground black pepper, to season

Instructions

  1. Put carrots in a large frying pan, cover with water and bring to the boil over a high heat. Reduce heat to medium and cook for 15-20 minutes or until just tender. Drain and transfer to an oven tray.
  2. Add butter to pan and return to heat. When butter has melted, add honey and orange rind and juice. Stir until combined and mixture comes to the boil.
  3. Reduce heat and simmer for 4 minutes or until mixture thickens slightly. Return carrots to pan and toss until coated with honey mixture. Transfer to a serving platter. Pour any remaining sauce over carrots.
  4. Add and saute 2-3 minutes:
  5. 10-15 walnut halves
  6. 2 satsuma mandarin oranges, sectioned
  7. Sea-salt flakes and freshly ground black pepper, to season
