Recipe: Heirloom Carrots with Oranges Ginger and Walnuts
Summary: If you can’t find heirloom carrots this recipe would still impress the dinner guests with very little time on your part!
Ingredients
- 1 bunch carrots
- 3 Tb butter
- 1-2 Tb brown sugar
- 2 Tb grated fresh ginger
- ¼ cup honey
- Juice and finely grated rind of 1 orange
- 10-15 walnut halves
- 2 satsuma mandarins, sectioned (or small can mandarin oranges)
- Sea-salt flakes and freshly ground black pepper, to season
Instructions
- Put carrots in a large frying pan, cover with water and bring to the boil over a high heat. Reduce heat to medium and cook for 15-20 minutes or until just tender. Drain and transfer to an oven tray.
- Add butter to pan and return to heat. When butter has melted, add honey and orange rind and juice. Stir until combined and mixture comes to the boil.
- Reduce heat and simmer for 4 minutes or until mixture thickens slightly. Return carrots to pan and toss until coated with honey mixture. Transfer to a serving platter. Pour any remaining sauce over carrots.
- Add and saute 2-3 minutes:
- 10-15 walnut halves
- 2 satsuma mandarin oranges, sectioned
- Sea-salt flakes and freshly ground black pepper, to season
