Roasted Tomato Soup & Grilled Cheese Croutons

Summary: So the best partner ever for cheesy toast is tomato soup. It’s creamy – bursting with good tomato and garlic flavor and the basil makes it utterly delicious.  A spoonful of soup and cheesy crouton sometimes makes my day complete.


12 cups of fresh Roma tomatoes, cut in half
1 medium onion, cut into quarters
4 large cloves of garlic, smashed
coarse salt, pepper
sprigs of fresh thyme or rosemary
4 tbsp extra virgin olive oil,
2 tbsp butter
3 cups of chicken or vegetable broth
1 tbsp honey
handful fresh basil, finely shredded
salt and pepper to taste
1/2 cup whipping cream
