Recipe: Slow-Cooked Chicken-Tomatillo Flautas

Summary: This is one shatteringly-crisp flauta — no frying required.

Ingredients

  • 4 tomatillos, peeled and cut into 1/8ths
  • 1 small yellow onion, chopped (if using a large onion, use about half)
  • 1 red bell pepper, seeded and chopped
  • 1 yellow bell pepper, seeded and chopped
  • 2 cloves garlic, finely chopped
  • 1 tablespoon canola oil + 1 teaspoon canola oil, divided, plus more for brushing
  • 4 skinless, boneless chicken breasts (about 2 1/2 lbs.)
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/4 heaped teaspoon cayenne pepper (add more if you like it spicy)
  • 1/4 heaped chili powder
  • salt and freshly ground pepper
  • 14 – 16 flour tortillas (8″ soft taco size)
  • 4 cups (16 oz.) shredded cheddar cheese
  • 2 cups (8 oz.) shredded pepper jack cheese
