Recipe: S’mores Cupcakes

Summary: These yummy cupcakes have everything that S’mores needs: graham cracker, Hershey’s chocolate, toasted marshmallow… At the bottom of these cupcakes are graham cracker crust, than rich chocolate cake, and on top is marshmallow frosting garnished with a square of chocolate.

Ingredients

  • Crust:
  • 1 1/2 cups graham crackers (approx. 1 pkg out of the Honeymaid box)
  • 1/4 cup sugar
  • 5 T unsalted butter, melted
  • 2 oz bittersweet chocolate, chopped into small pieces
  • Marshmallows (you’ll need about 100 mini marshmallows)
  • Cake:
  • 2 cups plus 2 T sugar
  • 1 3/4 cups all purpose flour
  • 3/4 cup cocoa powder
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup canola oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • Frosting:
  • 8 egg whites, room temperature
  • 2 cups sugar
  • 1/2 tsp cream of tartar
  • 2 tsp vanilla extract
  • 1 large Hershey bar
