Recipe: Southwest Pasta Salad
Summary: With the pasta’s unique smoky chipotle and lime flavor I thought a Southwest pasta salad would be the perfect way to use it!
Ingredients
- 1/2 lb uncooked pasta (any pasta will do)
- 1 green pepper, chopped
- 1 red pepper, chopped
- 1 can corn, rinsed
- 1 can black beans, or chili beans rinsed
- 1 avocado, cubed
- 4 scallions, sliced
- 3 garlic cloves, minced
- 3 Tbsp olive oil
- juice from one lime
- 3 Tbsp fresh cilantro, finely chopped
- salt and pepper to taste
