Recipe: Spicy Chipotle Chilaquiles

Summary: Chilaquiles are a traditional Mexican dish made with tortilla chips (or fried stale tortillas) cooked in a green chile sauce and topped with cheese. They are traditionally eaten for breakfast in Mexico with fried eggs on top. There are many variations in making chilaquiles, just like burritos and enchiladas.


  • 2 whole chicken breasts, boneless and skinless
  • 1 cup chicken stock/broth (either purchased or homemade)
  • 1 stalk celery, cut in half
  • 4 green onions, cut in half
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1 (14-ounce) can fire-roasted crushed (or diced) tomatoes with juice
  • 1 Chipotle Chile in Adobo*
  • 1 tablespoon vegetable oil
  • 1/4 cup chopped white onion
  • 3 whole garlic cloves
  • 1/2 teaspoon Mexican oregano
  • About 2 cups large tortilla chips
  • 1/4 cup chopped red onion
  • 1 1/2 cups (total amount) shredded sharp cheddar cheese and Monterey jack cheese
  • Sour cream
  • 1/4 cup finely-chopped cilantro leaves
