Recipe: St. Louis Ribs with Maple BBQ Sauce

- 2 Racks St. Louis Style Pork Ribs (Spare Ribs)
- for the sauce:
- 1 1/2 tablespoon canola oil
- 1/2 white onion, diced
- 1/2 tablespoons finely minced fresh ginger
- 2 garlic cloves, finely minced
- 1/4 teaspoon cayenne
- 1/8 teaspoon black pepper
- 1/2 cup cider vinegar
- 1/4 cup water
- 3 ounces tomato paste
- 1/4 cup soy sauce
- 2 tablespoon sesame oil
- 1 cup pure maple syrup
- 1 1/2 tablespoon dry mustard
- 1/8 teaspoon dried thyme
- 1/2 tablespoon kosher salt
- for the dry rub:
- 1/4 cup sweet paprika (use 1/2 pimenton if you have some for a smokier flavor)
- 1/2 cup brown sugar
- 1 tablespoon black pepper
- 1 tablespoon garlic powder
- 2 teaspoons cumin
- 2 teaspoons salt
- 2 teaspoons cayenne
- 1 teaspoon dry mustard
- 1/2 teaspoon dried oregano
