Recipe: Stovetop Butternut Macaroni and Cheese

Summary: Any cheese die hards out there? This mac n’ cheese are what dreams are made of. Sweet from the squash, salty and creamy from the cheese and all with a nice bite from the pasta..AND, you can get the vegetables into your kids without them even knowing! 


    • 1/2 pound cooked pasta {such as macaroni or rotini}
    • 3 tablespoons butter
    • 1/2 large onion, finely diced
    • 2 cloves garlic, minced
    • 2 cups diced butternut squash {1/4 inch dice}
    • 1 1/2 cups chicken stock
    • 1/2 pound grated cheddar cheese
    • 1/4 pound grated mozzarella cheese
    • 1/4 cup grated parmigiano reggiano
    • salt & pepper, to taste
    • 2 pinches nutmeg
    • 1-1 1/2 cups milk
