Super Spuds Scalloped Potato Gratin
One of my favorites ways to eat potatoes is with a lot of cheese. I mean who doesn’t? These are always a big hit anytime of year and are great the next morning with eggs and bacon.
Ingredients
- 1/2 cups fat free half and half, or heavy cream
- 1 sprig fresh thyme
- 2 garlic cloves, minced
- 1/2 teaspoon fresh ground nutmeg
- 1 teaspoon dry mustard
- 1 tablespoon butter
- 2 pounds russet potatoes, cut into 1/8” slices (I use a mandolin slicer)
- 1 half large sweet onion, or Vidalia cut into 1/8” slices
- salt & pepper, to taste
- 1/2 cup grated Parmesan, plus more for broiling
