Super Spuds Scalloped Potato Gratin

Ingredients

  • 1/2 cups fat free half and half, or heavy cream
  • 1 sprig fresh thyme
  • 2 garlic cloves, minced
  • 1/2 teaspoon fresh ground nutmeg
  • 1 teaspoon dry mustard
  • 1 tablespoon butter
  • 2 pounds russet potatoes, cut into 1/8” slices (I use a mandolin slicer)
  • 1 half large sweet onion, or Vidalia cut into 1/8” slices
  • salt & pepper, to taste
  • 1/2 cup grated Parmesan, plus more for broiling
