Recipe: Turkey Club Panini with Jalapeno Basil Pesto
Summary: In Italy, panino is the word for a sandwich made from bread other than sliced bread, in which case Italians call it a tramezzino, but this Jalapeno Basil Pesto makes it a whole new sandwich!
Ingredients
- Tomato sliced
- Ciabatta Bread
- Leaf lettuce or baby spinach
- 4 slices fully Cooked Naturally Smoked Bacon
- Oven Roasted Turkey Breast
- 2 slices Monterey Jack Cheese
- 2 slices Swiss Cheese
Jalapeño Basil Pesto
- 1 Jalapeño (slice and deseed if you don’t want too much heat)
- 1 1/2 cups basil
- 2 -5 garlic cloves
- 1/4 cup pine nuts (optional)
- 1/4 cup grated parmesan cheese
- 1/8 cup lemon juice
- 1/8 cup olive oil
Instructions
Jalapeño Basil Pesto
- Mix everything together in food processor except the oil and lemon.
- Once everything is mixed well, drizzle with lemon and oil.
- Mix until well blended.
- Will keep in refrigerator for 2-3 days.
Sandwich
- On a clean surface, slice bread.
- Spread mayonnaise on one side of each bread slice.
- Stack the following ingredients in order on the first slice of bread, lettuce, tomato, Monterey Jack Cheese, turkey, bacon.
- Place on a grill, panini maker, George Foreman works or wrap a brick in foil and place on top on your sandwich on the grill or grill pan (if using George Foreman, just turn it around half way through cooking about 5 minutes should be lightly browned)
