Summary: This veggie omelette recipe is especially helpful for the loads of greens that it contains alongside protein from the eggs. The fact that it contains less than six grams of sugar is just an added bonus.
- Two large eggs
- 6 broccoli florets
- 1 cup spinach
- 3 medium mushrooms
- 1 oz. shredded monterey jack cheese
- In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set. Add veggies and cheese, flip with a spatula. Reduce heat to low, and continue cooking 2 to 3 minutes, or to desired doneness.
