White Chocolate Coconut Oil Cookies

Recipe: White Chocolate Coconut Oil Cookies

Summary: These cookies are a great summer treat, and if you can’t find coconut oil (I got mine at Trader Joe’s), I’d recommend using butter and adding coconut extract to achieve that extra flavor. The flavor imparted by the oil is relatively subtle, and pairs nicely with the sweetness of the white chocolate..

    • 1/2 cup coconut oil, softened to the same consistency as softened butter
    • 1/2 cup sugar
    • 1/2 cup packed brown sugar
    • 1 large egg
    • 1 tsp vanilla extract
    • ½ tsp almond extract
    • 1 cup all-purpose flour
    • 3/4 cup bread flour (you can substitute all-purpose here if you don’t have bread flour, but your cookies might not spread a little more)
    • 1 tsp baking soda
    • 1/4 tsp salt
    • 1 cup white chocolate chips, or 6 oz roughly chopped white chocolate
